With this exceptional microlot, we enter a new category of specialty coffee processing: co-fermented coffees. We've tasted many and rejected many. Not this one. This is a coffee you simply have to try.
Co-fermentation is an innovative technique used in specialty coffee to create unique flavour profiles by fermenting coffee cherries together with carefully selected natural ingredients, such as fruits or herbs. The result is a cup with complex and distinctive flavour notes. It is an exciting and highly sophisticated process—but doing it well is no easy task. That's why we trusted James Meneses, a third-generation Colombian coffee producer whose coffees have gained national and international recognition for their exceptional quality and the precision of his processing methods. James represents a new generation of coffee producers who understand coffee in all its dimensions.
At his family's El Pedregal Farm, James carefully selected the finest Yellow Bourbon cherries at peak ripeness. The cherries undergo an initial whole-cherry fermentation of up to 72 hours in sealed tanks. They are then depulped, leaving the beans covered in their mucilage, before a second 48-hour fermentation with a small amount of water and tropical fruit musts. This final stage gives the coffee its distinctive character and remarkable complexity.
If this all sounds a little technical, don't worry. What really matters is the result: an extraordinary coffee with a fruity fragrance, a complex aroma, and a sweet, juicy cup bursting with tropical fruit notes. It has a silky body and a long, pleasant finish.
It's so delicious that we recommend enjoying it black, whether hot or iced. Either way, you're going to love it.
After all, as a true Fanático, you deserve to experience coffees like this.
And by the way… thank you, James!
