The harvest in the Highlands takes place between May and August, exporting the best quality washed Arabica beans. The seeds of the Blue Mountain, Typica and Arusha varieties are grown using the nutrients of the volcanic soil and the fallen leaves of the trees as fertilizer.
Our Papua beans, sieved 18, have a moisture content of 11%. With a gentle, slow roasting at medium temperature, we obtain a very complete and balanced coffee, with medium body and medium-high acidity. Its aroma has deep herbal notes and its flavor is smooth, clean, with hints of tropical fruit such as pineapple.
If you want to delight yourself with its aroma and tropical notes, taste it prepared in filtered or infusion methods. If you want to enhance its wild side, prepare a good espresso.

The immense and spectacular island of New Guinea, the island of birds, a giant of mountain ranges and impregnable jungles where tribes still live without having any contact with the outside world. A green lung in the Pacific Ocean, the island with the greatest biodiversity of flora on the planet.
In its eastern part we find the central region of the Eastern Highlands, one of the three coffee growing areas of the island, and the most remote. Here the cultivation is carried out in tiny family plots, coffee gardens in the shade of the trees in a tropical, humid and rainy climate.
The remoteness of the location is the main reason for its late incorporation into the international coffee market. The beans travel in trucks through the winding mountain roads and, sometimes, given the remoteness of the orchards or due to the impracticality of the roads, in small planes that land in clearings on the grass. Quite an adventure for the best grains in the country.
