This coffee is on another level. With it, we enter a new coffee dimension where technology and experimentation allow us to reach new heights of flavor. As a Fanático fan, you’ve probably tried several of the specialty coffees and rare gems we've discovered, but this process has truly captivated and surprised us: thermal shock.

At the Colombian farm Las Flores, located at 1,750 meters above sea level, the Vergara brothers have spent years experimenting with fermentation variations in specialty coffee until they discovered the tremendous impact of exposing the beans to strong temperature contrasts in water. This causes the pores of the seeds to open, eliminating unwanted enzymes and fixing volatile compounds. In short, it's a new process that drastically enhances aromas and flavors, unleashing a floral festival in your mouth after the first sip.

This unique microlot is freshly harvested and entirely composed of the native Chiroso variety, which grows exclusively in the Colombian mountains. It’s known for the elongated shape of its beans and its complex sensory profile, which has earned it a Cup of Excellence award. When a coffee with this profile undergoes a process like thermal shock and is roasted by a Fanático… Boom! You get an incredible result with a score of 88.5 SCA.

We found this exceptional coffee in a small municipality in the Colombian Andes, El Tambo, located 2,200 m. altitude, whose coffee plantations are the highest cultivated in the world. There, a cooperative of small producers selects the best beans, they clean, wash and dry them in the sun, producing only 250 bags a year from Supremo Nariño El Tambo, a coffee with its own name.

Its delicious aroma and flavor, full, balanced and with pleasant floral tones conquered us from the beginning. Light and smooth on the palate.

It is suitable for all coffee makers and to drink alone or with a little milk.

Ethiopia is the birthplace of coffee, where the Arabica coffee tree grows wild. The word "Coffee" comes from the Ethiopian city of Kaffa. It is a coffee with an excellent grain, with a very characteristic flavor and an unmistakable and intoxicating aroma.

It is best appreciated on its own, although it is also very rich with milk.

THE COFFEE

In 1988, Ulrich Baltensberger, originally from Switzerland, traveled to this island with a clear purpose: to start a thriving coffee plantation. And he succeeded. He acquired 93 hectares of land in the Central Mountain Range, in the province of Ocoa. Thanks to the excellent soil quality and perfect microclimate, he was able to prosper in coffee production and fulfill his dream.

Today, it’s his son Samuel—along with his wife Ana and their son Tiago—who run this family farm called Ibonna, a place where biodiversity, ecological farming, and socially responsible practices are at the core. The introduction of shade trees and proper water management techniques make this “island coffee” unique—not only because of its sustainable production, but also because of its sensory quality.

Ulrich’s legacy, our Dominican coffee, is consistent, smooth, and well-balanced, with a light citrus acidity and medium body, featuring subtle cocoa notes. It’s perfect for enjoying as a long filtered brew, a classic moka pot coffee, or a great espresso. A true journey to paradise.

THE ORIGIN

The Caribbean island of Hispaniola has a coffee-growing history dating back over three centuries, since coffee was first introduced in 1715. The Dominican Republic may be small in size, but its mountainous terrain and tropical climate offer ideal conditions for cultivating specialty coffee.

Though the number of coffee farmers decreases each year, production levels have remained steady thanks to the adoption of modern agriculture, which has increased both productivity and quality. This has allowed Dominican producers to successfully break into the specialty coffee market.
