As a Fanático fan, you’ve probably tried several of the specialty coffees and rare gems we've discovered, but this process has truly captivated and surprised us: thermal shock.

At the Colombian farm Las Flores, located at 1,750 meters above sea level, the Vergara brothers have spent years experimenting with fermentation variations in specialty coffee until they discovered the tremendous impact of exposing the beans to strong temperature contrasts in water. This causes the pores of the seeds to open, eliminating unwanted enzymes and fixing volatile compounds. In short, it's a new process that drastically enhances aromas and flavors, unleashing a floral festival in your mouth after the first sip.

This unique microlot is freshly harvested and entirely composed of the native Chiroso variety, which grows exclusively in the Colombian mountains. It’s known for the elongated shape of its beans and its complex sensory profile, which has earned it a Cup of Excellence award. When a coffee with this profile undergoes a process like thermal shock and is roasted by a Fanático… Boom! You get an incredible result with a score of 88.5 SCA.

Instructions

We explain how to prepare the perfect coffee in your Chemex filter coffee maker:

Chemex Instructions

1- Place the filter on the inner face of the upper cone of the coffee maker, leaving the 3 layers towards the pouring vertex.

2- Rinse the filter with hot water (not boiling) to eliminate bad tastes, while also preheating the coffee maker. You can use a kettle. It is recommended to use mineral water or quality water.

3- Eliminate all the excess water.

4- Place the ground coffee, medium grind. The recommended amount of coffee is 30 grams for every ½ liter.

5- Make a pre-infusion by pouring a little very hot water (approximately 93 ºC) over the coffee to moisten it. This will release all the desired components of the coffee.

6- Pour more water on top, until the base is soaked.

7- Once you have obtained the amount you want of coffee, raise the filter to be able to remove all the excess.

Number of cups: 1 to 6 cups.

CHEMEX® filters, the purest taste experience

100 round filters for the 6 to 8 cup Chemex coffee maker. The round Chemex filter can be used in the vast majority of Chemex coffee machines. It is specially designed to facilitate the removal of the filter once the process is finished.

This filter is made of high-quality, heavy-weight disposable paper. It is about 20% to 30% thicker. than any other filter. Thanks to this thickness, the coffee comes out excellently filtered without any bitter element from the coffee.

Can be used in most filter coffee makers that have a conical shape.

Can be used in all CHEMEX except CM-1, CM-1C, CM-1GH
